Ring Around the Rosies

The Race Car

For his birthday, Van received a bright, blue race car . I picked it up at Babystyle when they were having their closeout sale. Watch 'em go!

Heat Wave

It's been really hot here in the Pacific Northwest so we've been doing a lot of this to keep cool.

500 Days of Summer

Love Tom. Love/hate Summer.

Corn Salad

On Saturday we threw a party for our friends, Jake and AJ, who are moving to the Philipines. I used my new Everyday Food cookbook as a go to for my salads. My favorite of the evening was the corn salad. This recipe is so simple, yet so delicious.

6 ears of corn, husks and silk removed

3 scallions, thinly sliced crosswise (1/2 cup)

2 tablespoons white-wine vinegar 2 tablespoons olive oil

Coarse salt and ground pepper

Remove kernels: Cut off tip of each cob; stand in a wide shallow bowl. With a sharp knife, slice downward to remove kernels.

To bowl, add scallions, vinegar, and oil. Season generously with salt and pepper; toss to combine. Serve, or cover and refrigerate up to 1 day.
