Shrimp Pad Thai - Martha Stewart Everyday FoodAsian Chicken Lettuce Wraps - America's Test Kitchen Short-grain white rice or sushi rice can be substituted for the brown rice. To make the dish spicier, add the chile seeds. You may assemble the wraps before serving or serve the bowls of rice and filling along with the leaves and allow everyone assemble their own.

1 cup short-grain brown rice

1 1/2 cups water

1 pound ground chicken

2 teaspoons canola oil

1 jalapeno chile, stemmed, seeded, and minced

2 teaspoons grated lime zest plus

3 tablespoons fresh lime juice from 2 limes

3 tablespoons fish sauce

1 1/2 tablespoons brown sugar

1 teaspoon cornstarch

1/4 cup chopped fresh basil

3 scallions, sliced thin

12 bibb or boston lettuce leaves

Bring the rice and water to a simmer in a medium saucepan over high heat. Cover and cook over low heat until the rice is tender and the water is absorbed, 45 to 50 minutes. Remove the pot from the heat and lay a clean folded kitchen towel underneath the lid. Let sit for 10 minutes.

In a medium bowl, mash the ground chicken with the back of a spoon until smooth and no strand-like pieces of meat remain.

Heat the oil in a 12-inch nonstick skillet over medium heat until shimmering. Add the ground chicken, chile, and lime zest and cook, breaking up the meat into small pieces, until no longer pink, about 5 minutes.

Whisk the lime juice, fish sauce, brown sugar, and cornstarch together, then add the mixture to the skillet and cook, stirring constantly, until the sauce has thickened, about 45 seconds. Off the heat, stir in the basil and scallions. Serve the chicken filling with the rice and lettuce leaves.

Under the Weather

The boys have had colds for the past few weeks it seems. First Van, then Gus, then Van again. We found out on Monday that they have ear infections as well; a first for both of them. Thus, we have a double dose of amoxicillin going on at our house.

We also discovered this week that Van has a communicating hydrocele; a mass of abdominal fluid surrounding the testis. This occurs when the opening between the abdominal cavity and the scrotum has not closed properly and completely. We had a surgery consult on Wednesday and he his scheduled to go in on February 24th. It's a common occurrence in boys and completely painless.

I saw the idea for the bunting on Pinterest and knew I had to incorporate it into Gus' party. It was super easy. My sister has a Cricut so she helped me cut the party hats for the bunting and the circles for the garland. I also thought it would be fun to do another ball toss, like this one I did last year. Only this time it was a giant Gussy head.

Gus' Party - The Food

The idea for the party came from Gus' love for balls. The food for the party was kid friendly and circle shaped. We had peanut butter and jelly sandwiches cut into circles, Ritz crackers, Babybel cheese, cucumber rounds, pineapple rings, and grapes. For desert there were cinnamon roll pops, Oreo cookie pops (tutorial here), cupcakes, and ice cream balls.

For the favors I sent each child home with a bouncy ball wrapped inside a little white box. We had some extra cupcake toppers so my mom suggested using them as tags for the favors. It was a nice finishing touch.

Zoo Day

Over the weekend (before the snow hit) we took the boys to the zoo. It was a great day; cool temperatures and no crowds. There may have been a dozen other people there that afternoon. At times it felt like we weren't actually supposed to be in there, like it was closed or something. So strange.

New Things

Gus' third tooth broke through; his upper lateral incisor (or canine). Weird, I know, since you normally get your central ones first. My sister was the one who actually noticed it. Thanks, Ange.

Van is a full-fledged pooper! He has gone to the bathroom (number two) everyday for almost two straight weeks. Those who have known the drama behind his bowel movements realize that this is huge for us. A miracle I tell ya!

We have also entered another new stage in life. Nightmares. Van's most recent one has been about a lion coming into his room and climbing on his bed. This could be due to the fact that he has been obsessed with watching The Lion King.

Also, in case any of you were wondering, Spencer is still waiting for interviews. We're anxious, but hopeful.

One on One

On Wednesday Gus and I were able to spend the afternoon together; just the two of us. (Van was on a play date with his Uncle Tony). It was extremely refreshing to be able to take a moment and spend some much needed time with him. We played catch, listened to music, read books, played peek-a-boo, giggled, laughed, and snuggled. It was a magical afternoon.

Natural History Museum

The new Natural History Museum of Utah opened in November and offered it's first free admission day on Monday. The building is stunning, inside and out. I was amazed by the architecture and modern design.
The kids on the other hand, enjoyed the dinosaurs . . . I'd like to plan another visit; one where there are less people and we can spend more time enjoying the wonder that it is. (A date night, perhaps?)

A Surprise Visit

I was recently called to teach Gospel Doctrine in our new ward. (Which, for me, is a daunting task in and of itself). And last Sunday, New Years Day, it was my turn to teach. As we were hustling into church there was an elderly couple hanging up their coats. (A strange thing to see in a student ward). We passed by with a quick "hello" and immediately my first thought was, "that man looked quite similar to Elder Oaks." When I turned around to head into the chapel, I noticed a bunch of ward members clustered together whispering and giggling. By their abnormal behavior I was able to deduce that the man I saw was in fact Elder Oaks.

Elder Oaks took his place on the stand and Sister Oaks sat towards the back of the chapel, near where we were sitting. One by one, families strolled in recognizing the apostle on the stand. It was a wonderful meeting, with a theme on repentance and new beginnings. After the last assigned speaker gave his talk, Elder Oaks shared a few words with us. He said that he woke up that morning feeling impressed to attend one of the student wards at the University of Utah; he knew that the meetinghouse on Sunnyside would certainly have a ward in attendance. And sure enough it did, and it was ours! He spoke on the upcoming election and advised us to be forgiving of the shortcomings of those campaigning.

At the close of the meeting I said hello to Sister Oaks and introduced our family. She was a very sweet lady and extremely personable. We then took Van up to the stand to shake hands with Elder Oaks. Other members in the ward had the same idea so we made our way out of the chapel. It was Van's first day as a Sunbeam, so we walked him into the Primary room to find his spot on the row. As we were headed to Gospel Doctrine, one of the counselors in the bishopric informed me that Elder and Sister Oaks would be coming to my class. (Oh the horror)! Butterflies soon started to swarm inside my belly. Spencer was very supportive and tried to calm my nerves by stating that everything was going to be fine. I took a few deep breaths and reminded myself that they were just normal people, like everybody else. (Ya, right).

The lesson seemed to go well. I think it helped that Elder and Sister Oaks were sitting towards the back and were hard to see. There was also a lot of class participation, which is always refreshing. Sister Oaks even made a comment to one of the questions that I asked. I was so thrown aback I didn't really know how to respond. After the closing prayer Elder Oaks walked over to where we were sitting and said that I did a very good job. He said that he's sat in on other classes before and those teachers didn't seem nearly as composed as I did. (Sigh of relief). He asked us where we were from, how we met, and what Spencer was studying.

It was an exciting and eventful Sunday, one that I am sure to never forget. And hopefully now, after teaching Elder Oaks, I won't be as nervous to teach again.

Last Friday Van cut his head open at his friend Ian's house. He received five staples to close the wound. He was very brave and hardly cried. Here is his account of what happened that day:

"I was playing with my friend Ian. And it wasn't bike time. And he pushed me off his bike. I hit my head on the corner. Then, we play with play dough and I look at my hand and say, 'What's that?' And Ian's mom, Lindsay, says 'Oh, you're bleeding!' And then we go to the hospital and I get five staples. And Mommy tells the doctor 'One at a time' (??). And I didn't cry, only a little bit. And I get a sucker and a sticker."

The staples come out on Monday.

We took the boys to ZooLights on Friday night. Not only were the lights amazing, but Santa Claus was there and he was wonderful. The best Spencer and I have seen. He visited with each child for a good five minutes. Van was happy to sit and chat, Gus, not so much. If you're here locally and can find some time this holiday season, I highly recommend visiting the zoo.

The Boys

Gus: Gus recently had his nine month well check. He is 19 pounds 8 ounces (38%) and 28.5 inches (59%); head circumference: 45.9 centimeters (71%). He currently has two teeth, his lower central incisors, and may be working on some more. He loves cruising around the house and can pull up to standing position; bath time is a lot of fun for him. He also enjoys looking at picture books. Lately he has been understanding small requests like, "no", "come here", "hands up", and "patty cake." He dances, claps, and sings "la, la, la, la, la."

Van: Van weighs 30.4 pounds and is 38 inches tall. His favorite thing to eat as of late are pickles. He is doing really well at preschool and is learning lots of new things. He has a great memory, is quite inquisitive and super imaginative. Recently he used his "magic wand" to present us with special items. First asking us what we would like, upon which he would say "kazap, kazap" and our request would be granted. Just the other day he walked over to me with Spencer's human physiology book and said, "Mom, can you put this away for me? I'm all done doing my research."

My super creative sister, Angie, threw her daughter, Sydnee, a fairy party for her fourth birthday. It was a gorgeous fall day, which allowed for the party to be outside. Van received a special cape that she and my mom made for him. They played fairy freeze and musical wands, and we ate a ton of delicious food. Thanks for the fun party, Angie and Sydnee!

While Spencer was on fall break last week we drove up Big Cottonwood Canyon and hiked around Silver Lake. There was a little bit of left over snow from the week prior, but that didn't deter us. It was a gorgeous day and a great family outing.

A Witches Brunch

The boys and I were invited to a Halloween brunch. All in attendance were asked to come dressed as witches or wizards. I was able to come up with one witch and two Harry Potter's (school aged and baby) with some things my mom and I had on hand. Since my boys were the only two wizards at the party, I think they were a big hit.

Any suggestions on how to get my stubborn (and persistent) eight month old to stop waking for his four o'clock feeding? I've tried for over a week now and he just won't give in; he cries and cries. This has been his only feeding since he was six weeks old and I swear it's just habitual now. Help!

On Saturday we took Van to see The Lion King in 3D. This was his first time seeing a movie at the theatre. He seemed to really enjoy the show and didn't mind wearing the 3D glasses. I think his favorite part was "I Just Can't Wait to Be King."

The weekend after we moved in there was a block party hosted by the Resident Council. There were a lot of different things for the kids to do: jump houses, balloon animals, rocket launching, Home Depot Kids Workshop, and Van's favorite, trying out the construction equipment. We filled our pockets with a bunch of loot and our tummies with popcorn, pizza, cotton candy, and snow cones.

Van started preschool two weeks ago and as you can see, he was super excited about it. I was preparing for the worst, but it never came. He walked right into the classroom, hung up his bag, grabbed his name tag and said, "You'll come pick me up later, Mom." And that was that. I held back the tears as I drove out of the parking lot. I couldn't have been more proud of him.

His teachers are Ms. 'Pickle' and Ms. Coreen and they are awesome. There are about sixteen kids in his class and he has already started referring to some of them at home, particularly a girl named Ruth. His first assignment was to fill out his 'spotlight' for the bulletin board and here are some of his answers . . .

The Dentist

Van had his first visit to the dentist the end of last month. We went to the dental clinic at Primary Children's Medical Center. It was a great experience for him and for me. Both the hygienist and the dentist were great with him; taking the time to show him the tools, explain each step, and allow for him to get comfortable with the situation. There was even a little TV on the ceiling.

Van did an excellent job holding still and following instructions. Overall, he received a good report. His teeth and gums appear to be healthy, but I was instructed to floss daily due to excessive crowding. Apparently he has large teeth and a small jaw, which causes overcrowding. He also has overjet and will definitely have to have braces one day. (Good thing his daddy is going to be a dentist).

Bridal Shower

My brother, Tony, is getting married this Saturday. Here are some pictures from the shower I helped put together for his bride-to-be, Amanda. I created the invitations to match the colors of the accordion lanterns Abbie let me borrow, and the rest of the preparations sort of just fell into place. On the menu; mini powered donuts, raspberry scones, deviled eggs, bacon tartlets, apple bars, orange rolls, veggie pizza and fruit kebabs.

For activities, we played the How Old Are You? Game and a Couple's Pop Quiz. For the game, photographs of Amanda were displayed and guests wrote down their guess as to how old she was in each picture. For the quiz, Tony was filmed answering a series of random questions pertaining to their relationship. Custom quiz cards were handed out with the questions and the guests would guess whether they thought the bride would get the answer right or not. Watching Amanda try to guess Tony's response was definitely the highlight of the event.

Lastly, for the favors, my sister Angie made vanilla, almond, and chocolate pizzelles. We stuffed them into brown cookie bags I picked up from the bakery counter at Harmons and polished them off with some coordinating thank you labels. All in all it was a great time and I was happy to help see Amanda off on this new chapter in her life!

. . . horse herpes that is. At the Davis County Fair, the only horses in the rodeo beauty pageant arena were in a bucket. This video features junior queens competing on stick horses. According to Spencer, all the girls need are a couple of coconuts (as seen on The Holy Grail) and it would make the story that much better.

Six Month Well Check

Gus has begun to babble and he quite enjoys it. It's like a little game to him, making sounds and combining syllables. We have started him on solid foods and he loves them; hasn't rejected a single thing yet. He's starting to figure out how to crawl, and I say that in the loosest terms. Basically, he gets up on his knees and lunges forward. He has begun to experience a little bit of stranger anxiety (must love his mama). And he enjoys sitting on the floor, playing with toys and his brother.

Bear Lake - Set 6

When we weren't out on the ski boat, we spent time on the paddle boat, canoe, or kayak. I was able to go sailing for the first time this year as well. Our final night we had an auction to raise funds for the next reunion. Spencer was the auctioneer and he charmed the audience with his great wit.

Auntie Sarah came prepared with her sculpting clay. The older kids learned how to make elves and the younger ones, bugs. It was great fun for all who participated. Each year we take part in a service project. This year we helped put up siding on the north side of the house.

There were many things to do around the cabin while we weren't enjoying the sun and surf. Van spent time riding around on the adult tricycle, watching the tractor launch the boat, and playing soccer with his cousins. All participated in a family variety show; Van performed "Book of Mormon Stories."

The weather was beautiful all week. There wasn't a single day without sunshine. It was perfect. Gus enjoyed being doted on and kicking around in the little pool. He was definitely a big hit with the family.

It was so nice to have Spencer with us for an entire week away from work. The boys enjoyed spending time with him. Since I knew the water would be high this year, I came prepared with an inflatable pool, sprinkler, and shark (thanks Kim).

The water level was extremely high this year, 8" down from full to be exact. To give you an idea of how much the lake has risen, last year it was 6' 2" down from full. Because of the water level we had life jackets on the kids for the majority of the time. Here we enjoy our first morning by the lake.

Van's Birthday Party

For Van's birthday this year I wanted to keep it simple and cost-effective (after nearly breaking the bank last year). I sent out a Paperless Post inviting a few of his friends and cousins to tour the fire station with us.Captain Bush's team did a tremendous job. They were great with the kids and very engaging. After we toured the station they took us outside to play with the water. The kids loved having a chance to spray the hose.Souvenirs were provided by the department. Each kid went home with a pencil, eraser, coloring book, and temporary tattoo. I made box lunches for all in attendance and we spent the rest of the time swimming at our pool.

He's Three

Today our Van turns three. At times it's hard to believe; he's grown up so much. Van is a good boy, with a sensitive heart. He likes to sing (often to his own lyrics), is quite the dancer, and absolutely loves to dig in the dirt. He's a wonderful brother and simply adores his Gussy-gus. I feel blessed to call him my son.

Van finished his first session of swim lessons last week. He was a bit nervous about swimming with an instructor instead of me, but after a couple classes he was good to go. We signed him up for another session after the reunion to keep him going with his skills.

Last month while Spencer was in California (a late post, I know) we went to the Kennecott Copper Mine with my brother Tony. It was a long drive out to Bingham Canyon, but Van thoroughly enjoyed seeing all the heavy equipment. I have memories of visiting the mine when I was little and it has really changed since then.
